Ingredients:
- 1 cup quinoa
- 2 cups water
- 1 cup cherry tomatoes
- 1 cucumber
- 1/4 cup red onion
- 1/4 cup Kalamata olives
- 1/4 cup feta cheese
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
